Benefits of Coconut Oil

Coconut Oil once given a bad rap (funny how that kind of marketing takes place!), but is a very healthy oil to use. In fact, after reading things such as this, I'm going to purchase some and use it for my stir frys and sauteing.

Here's a bit of a quote:
"Once thought of as an unhealthy oil due to its high saturated fat content, coconut oil is making a comeback as one of the healthiest oils and most nutritious of all foods. Unlike other sources of saturated fat, coconut oil contains medium and short chain fatty acids. Medium chain fatty acids are easier for the body to digest. Instead of being converted to fat, they are sent directly to the liver where they are metabolized for energy. This is the reason why people who supplement or cook with coconut oil report increased energy and weight loss. In addition, it has been shown to stimulate the thyroid gland and help people with thyroid problems."
